Description

A hearty and flavorful chili made with tender beef, sweet potatoes, and a kick of spice, perfect for a cozy meal.


Ingredients

  • Main Ingredients
  • 2 pounds Beef chuck, cut into 1-inch cubes
  • 2 medium Sweet potatoes, peeled and diced
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans Black beans (15 ounces each), drained and rinsed
  • 1 can Diced tomatoes with green chilies (15 ounces)
  • 2 cups Beef broth
  • 2 tablespoons Chili powder
  • 1 tablespoon Cumin
  • 1 tablespoon Smoked paprika
  • 1 teaspoon Cayenne pepper (adjust to taste)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon Olive oil
  • 1 Bell pepper, chopped
  • 1 cup Corn (frozen or fresh)
  • Fresh cilantro, for garnish (optional)
  • Sour cream, for serving (optional)


Instructions

  1. In a large skillet over medium-high heat, add the olive oil. Season the beef cubes with salt and black pepper. Brown the beef for about 5–7 minutes, turning occasionally until all sides are browned. Transfer the beef to the slow cooker.
  2. In the slow cooker, add the chopped onion, minced garlic, diced sweet potatoes, bell pepper, black beans, corn, and diced tomatoes with their juice.
  3. Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, and additional salt and pepper. Pour in the beef broth and stir everything to combine.
  4. Cover and cook on low for 6–8 hours or on high for 4–5 hours, until the beef is tender and flavors are well blended.
  5. Stir the chili well, taste, and adjust seasoning if needed. Serve hot, garnished with cilantro and a dollop of sour cream if desired.
