A flavorful and hearty dish made with chicken, rice, beans, and spices, cooked slowly to perfection in a slow cooker.

- 1.5 lbs Boneless, skinless chicken breasts
- 1 cup Long-grain white rice
- 1 can (15 oz) Black beans, drained and rinsed
- 1 can (15 oz) Corn, drained
- 1 can (10 oz) Diced tomatoes with green chilies
- 1 cup Chicken broth
- 1 packet Taco seasoning
- 1 cup Bell peppers, diced (any color)
- 1 small Onion, diced
- 2 cloves Garlic, minced
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
- Sprinkle the rice evenly over the chicken. Add the black beans and corn on top of the rice.
- In a separate bowl, combine the diced tomatoes (with juices), chicken broth, taco seasoning, cumin, paprika, minced garlic, salt, and pepper. Mix well.
- Pour the mixture over the chicken, rice, and beans, ensuring even coating.
- Scatter the diced bell peppers and onions over the top.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and the rice is tender.
- Remove chicken and shred with two forks, then return to the slow cooker and stir everything together.
- Serve in bowls, garnish with fresh cilantro, and serve with lime wedges.
Notes
- Feel free to adjust the spices according to your taste. You can also add other vegetables like zucchini or spinach for extra nutrition.
