Description

A flavorful and hearty dish made with chicken, rice, beans, and spices, cooked slowly to perfection in a slow cooker.


Ingredients

  • 1.5 lbs Boneless, skinless chicken breasts
  • 1 cup Long-grain white rice
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 can (15 oz) Corn, drained
  • 1 can (10 oz) Diced tomatoes with green chilies
  • 1 cup Chicken broth
  • 1 packet Taco seasoning
  • 1 cup Bell peppers, diced (any color)
  • 1 small Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Sprinkle the rice evenly over the chicken. Add the black beans and corn on top of the rice.
  3. In a separate bowl, combine the diced tomatoes (with juices), chicken broth, taco seasoning, cumin, paprika, minced garlic, salt, and pepper. Mix well.
  4. Pour the mixture over the chicken, rice, and beans, ensuring even coating.
  5. Scatter the diced bell peppers and onions over the top.
  6. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and the rice is tender.
  7. Remove chicken and shred with two forks, then return to the slow cooker and stir everything together.
  8. Serve in bowls, garnish with fresh cilantro, and serve with lime wedges.

Notes

  • Feel free to adjust the spices according to your taste. You can also add other vegetables like zucchini or spinach for extra nutrition.
