Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ½ cups long-grain white rice
  • 2 cups chicken broth
  • 1 cup lemon juice (freshly squeezed)
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 lemon, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken with salt, pepper, garlic powder, and onion powder.
  2. Optional: Sear chicken in olive oil 2–3 minutes per side, then transfer to slow cooker.
  3. Mix rice, chicken broth, lemon juice, thyme, and oregano in a bowl.
  4. Pour rice mixture over chicken in the slow cooker.
  5. Place lemon slices on top of rice.
  6. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.
  7. Check chicken internal temperature 165°F before serving.
  8. Remove chicken, fluff rice, adjust seasonings, and serve garnished with parsley.
