This incredible slow cooker dish combines juicy lemon herb chicken with fluffy rice, creating a flavorful and comforting meal for busy weeknights.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 ½ cups long-grain white rice
- 2 cups chicken broth
- 1 cup lemon juice (freshly squeezed)
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 lemon, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken with salt, pepper, garlic powder, and onion powder.
- Optional: Sear chicken in olive oil 2–3 minutes per side, then transfer to slow cooker.
- Mix rice, chicken broth, lemon juice, thyme, and oregano in a bowl.
- Pour rice mixture over chicken in the slow cooker.
- Place lemon slices on top of rice.
- Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.
- Check chicken internal temperature 165°F before serving.
- Remove chicken, fluff rice, adjust seasonings, and serve garnished with parsley.
