- For the Beef
- 2 lb beef chuck roast or stew meat
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1 large onion, sliced
- 1 cup beef broth
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- 2 tbsp olive oil
- Optional Garnish
- Fresh parsley, chopped
- Crusty bread or mashed potatoes
Instructions
- Prepare Beef: Season beef with salt, pepper, smoked paprika, and thyme. In a skillet, heat olive oil over medium-high heat and sear beef on all sides until browned.
- Slow Cook: Place seared beef in a slow cooker. Add butter, minced garlic, sliced onion, and beef broth.
- Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours until beef is tender.
- Serve: Remove beef and shred or slice as desired. Spoon sauce and onions over the beef. Garnish with fresh parsley and serve with crusty bread or mashed potatoes.
Notes
- Use a well-marbled chuck roast for the most tender results.
- Can be cooked in an Instant Pot using the slow cook function.
- Leftovers taste even better the next day.
