Ingredients

    • For the Beef
    • 2 lb beef chuck roast or stew meat
    • 4 tbsp unsalted butter
    • 6 cloves garlic, minced
    • 1 large onion, sliced
    • 1 cup beef broth
    • 1 tsp dried thyme
    • 1 tsp smoked paprika
    • Salt & black pepper, to taste
    • 2 tbsp olive oil

  • Fresh parsley, chopped
  • Crusty bread or mashed potatoes


Instructions

  1. Prepare Beef: Season beef with salt, pepper, smoked paprika, and thyme. In a skillet, heat olive oil over medium-high heat and sear beef on all sides until browned.
  2. Slow Cook: Place seared beef in a slow cooker. Add butter, minced garlic, sliced onion, and beef broth.
  3. Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours until beef is tender.
  4. Serve: Remove beef and shred or slice as desired. Spoon sauce and onions over the beef. Garnish with fresh parsley and serve with crusty bread or mashed potatoes.
