A hearty and comforting slow cooker dish featuring tender beef, creamy potatoes, and melted cheddar cheese.
Ingredients
- 2 lbs beef stew meat
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 1/2 cup sour cream
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the beef stew meat and sear until browned on all sides. Transfer the browned beef to the slow cooker.
- In the slow cooker, add the chopped onion, minced garlic, diced potatoes, and season with salt, black pepper, paprika, and thyme.
- Pour in the beef broth and sour cream over the beef and vegetables. Stir gently to combine all the ingredients.
- Cover the slow cooker and set it to low. Cook for 6–8 hours or until the beef is tender and the potatoes are cooked through.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top. Cover and continue to cook until the cheese is melted and bubbly.
- Once done, give it a gentle stir and serve hot. Enjoy your delicious beefy cheesy potato bake!
