Description

A hearty and comforting slow cooker dish featuring tender beef, creamy potatoes, and melted cheddar cheese.


Ingredients

  • 2 lbs beef stew meat
  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil


Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the beef stew meat and sear until browned on all sides. Transfer the browned beef to the slow cooker.
  2. In the slow cooker, add the chopped onion, minced garlic, diced potatoes, and season with salt, black pepper, paprika, and thyme.
  3. Pour in the beef broth and sour cream over the beef and vegetables. Stir gently to combine all the ingredients.
  4. Cover the slow cooker and set it to low. Cook for 6–8 hours or until the beef is tender and the potatoes are cooked through.
  5. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top. Cover and continue to cook until the cheese is melted and bubbly.
