Ingredients
- For the Dip
- 1 can white beans
- 1/4 cup bean canning liquid
- 2 cloves garlic
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- For the Caramelized Onions
- 2 large yellow onions
- 1 tablespoon tomato paste
- 2 tablespoons sunflower oil
Instructions
- Drain the canned white beans, reserving a quarter cup of the canning liquid.
- Blend the drained beans, reserved canning liquid, half the salt, and garlic in a food processor until smooth.
- Slice the yellow onions thinly and add to a non-stick skillet with oil, tomato paste, remaining salt, and smoked paprika. Cook over low to medium-low heat for 10 minutes.
- Continue cooking the onions for another 8–10 minutes until caramelized and golden brown.
- Spread the bean mixture in a serving dish and spoon the caramelized onions on top.
Notes
For best flavor, serve immediately after preparation. Can be stored in the fridge for up to 4 days or frozen for up to 3 months.
