Ruth’s Chris Creamed Corn Au Gratin is a rich and comforting side dish made with sweet fresh corn folded into a silky cream sauce, finished with a golden, cheesy breadcrumb topping. Creamy, savory, and irresistibly indulgent.
Ingredients
- 4 cups fresh corn kernels (from about 6 ears)
- 1 cup heavy cream
- 1 cup milk
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup breadcrumbs (for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 2 minutes to form a roux.
- Gradually whisk in heavy cream and milk. Cook 5–7 minutes until thickened.
- Stir in corn, salt, pepper, garlic powder, and onion powder.
- Remove from heat and fold in cheddar and Parmesan until melted.
- Transfer to a greased baking dish and sprinkle breadcrumbs evenly on top.
- Bake for 25–30 minutes until golden brown and bubbly.
- Let rest 5 minutes before serving.
Notes
- Can be prepared up to 2 days ahead and baked before serving.
- Store leftovers in an airtight container for up to 3 days.
- Substitute half-and-half for a lighter version.
- Use gluten-free flour for a gluten-free option.
