Description
A quick and delicious breakfast quesadilla that is easy to make and perfect for busy mornings.
Ingredients
- 1 large flour tortilla (8-inch)
- 2 large eggs
- 2 tablespoons milk
- Salt and freshly ground black pepper, to taste
- 1/3 cup shredded cheddar or Monterey Jack cheese
- 2 tablespoons diced bell pepper
- 2 tablespoons chopped baby spinach
- 2 tablespoons diced tomato
- 1 tablespoon chopped green onion
- 1 teaspoon butter or olive oil
Instructions
- Whisk eggs with milk, salt, and pepper until fully combined.
- Heat a nonstick skillet over medium heat. Add butter or oil, then scramble eggs until just set. Remove from heat.
- Lay tortilla flat and sprinkle half the cheese on one side. Top with eggs, vegetables, and remaining cheese. Fold in half.
- Return quesadilla to skillet and cook 1–2 minutes per side until golden and cheese is melted.
- Remove, slice into wedges, and serve immediately.
Notes
- Customize fillings to your taste.
- Add jalapeños or hot sauce for extra heat.
- Can be made ahead and reheated for busy mornings.
