Description

A quick and delicious breakfast quesadilla that is easy to make and perfect for busy mornings.


Ingredients

  • 1 large flour tortilla (8-inch)
  • 2 large eggs
  • 2 tablespoons milk
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup shredded cheddar or Monterey Jack cheese
  • 2 tablespoons diced bell pepper
  • 2 tablespoons chopped baby spinach
  • 2 tablespoons diced tomato
  • 1 tablespoon chopped green onion
  • 1 teaspoon butter or olive oil


Instructions

  1. Whisk eggs with milk, salt, and pepper until fully combined.
  2. Heat a nonstick skillet over medium heat. Add butter or oil, then scramble eggs until just set. Remove from heat.
  3. Lay tortilla flat and sprinkle half the cheese on one side. Top with eggs, vegetables, and remaining cheese. Fold in half.
  4. Return quesadilla to skillet and cook 1–2 minutes per side until golden and cheese is melted.
  5. Remove, slice into wedges, and serve immediately.

Notes

  • Customize fillings to your taste.
  • Add jalapeños or hot sauce for extra heat.
  • Can be made ahead and reheated for busy mornings.
