Description

Pizza Soup has all your favorite pizza flavors in hearty, cozy soup form! Loaded with juicy Italian sausage, pepperoni, rich tomato broth, and topped with melty mozzarella—easy to make and incredibly satisfying.


Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 garlic cloves, finely diced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried marjoram
  • 1 can (14 oz) crushed tomatoes
  • 1 cup tomato sauce
  • 1 tsp sugar
  • 4 oz pepperoni, quartered
  • 4 cups chicken stock
  • 68 fresh basil leaves, shredded
  • 4 oz mozzarella cheese, grated
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook, breaking it up, until browned.
  2. Add onion and green bell pepper and sauté until softened.
  3. Stir in garlic, oregano, basil, and marjoram; cook for 1 minute until fragrant.
  4. Add crushed tomatoes, tomato sauce, sugar, pepperoni, and chicken stock. Stir well and bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Stir in fresh basil and season with salt and pepper to taste.
  7. Ladle into bowls and top with mozzarella. Let melt before serving.

  • Use spicy Italian sausage for extra heat.
  • Serve with crusty bread or garlic knots for a full pizza night feel.
