Description
Pineapple Rice is a vibrant sweet-and-savory dish featuring fluffy rice, fresh pineapple, garlic, ginger, and warm spices. Naturally vegan and gluten-free, this tropical-inspired recipe is perfect as a main dish or flavorful side and comes together in just over 30 minutes.
Ingredients
- 1 tbsp oil (avocado or olive oil)
- 2 garlic cloves, minced
- 1 (2-inch) knob fresh ginger, grated or minced
- 1 cup uncooked white rice (Jasmine or Basmati)
- 2 cups fresh or frozen pineapple, chopped
- 1 tbsp sriracha
- 1 tbsp coconut aminos (or soy sauce)
- 1 tsp coconut sugar
- 1 tsp salt
- ¼ tsp red chile flakes
- 1½ cups water
Instructions
- Heat oil in a saucepan over medium heat. Add garlic and ginger and sauté about 5 minutes until fragrant.
- Stir in uncooked rice and toast for 2 minutes.
- Add pineapple, sriracha, coconut aminos, coconut sugar, salt, and red chile flakes. Stir to combine.
- Pour in water and bring to a boil.
- Reduce heat to medium-low, cover, and simmer for about 15 minutes until water is absorbed.
- Remove from heat and let rest covered for 5 minutes.
- Fluff with a fork and serve.
Notes
- Fresh pineapple gives the brightest flavor, but frozen works well too.
- Adjust sriracha and chile flakes to taste.
