Ingredients
1 pineapple, chopped
1 English cucumber, chopped
2 limes, zested and juiced
⅓ cup cilantro, roughly chopped
Salt and pepper, optional
Instructions
1. Combine pineapple, cucumber, lime zest, and lime juice in a large bowl.
2. Add chopped cilantro and gently toss to mix evenly.
3. Season with salt and pepper to taste.
4. Chill for 30–60 minutes before serving, or serve immediately.
5. Store leftovers in the fridge in an airtight container for up to 2 days.
Notes
For more kick, add chili flakes or diced jalapeño.
Substitute cilantro with mint or basil for a flavor twist.
For a lower sugar version, reduce pineapple and add avocado.
