Description

Ingredients

  • For the crust:
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold butter, cubed
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 23 tablespoons cold water
  • (Or use a pre-made pie crust for convenience!)
  • For the pecan filling:
  • 1 cup light brown sugar
  • 3/4 cup maple syrup (or dark corn syrup alternative)
  • 1/3 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups pecan halves


Instructions

  1. Prepare the crust: In a large bowl, combine flour, sugar, and salt. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Add cold water, 1 tablespoon at a time, just until the dough comes together. Shape into a disk, wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven: Set oven to 350°F (175°C).
  3. Roll out crust: On a lightly floured surface, roll the chilled dough into a 12-inch circle. Fit it into a 9-inch pie dish, trim edges, and crimp as desired. Chill the crust while preparing the filling.
  4. Make the filling: In a medium bowl, whisk together brown sugar, maple syrup, melted butter, eggs, vanilla, and cinnamon until smooth. Stir in pecan halves until evenly coated.
  5. Assemble and bake: Pour filling into the prepared crust and spread evenly. Bake for 50–55 minutes, or until the center is set and the top is golden. If edges brown too quickly, cover them with foil halfway through baking.
  6. Cool and serve: Let the pie cool completely before slicing to allow the filling to set. Serve as-is or with a scoop of vanilla ice cream or whipped cream for a decadent finish.
