Description
This Overnight Blueberry French Toast Casserole is a make-ahead breakfast delight featuring layers of soft French bread, sweet cream cheese, and fresh blueberries — perfect for busy mornings or brunch.
Ingredients
- For the cream cheese mixture:
- 1 cup blueberries
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tbsp vanilla extract (split: half for cream cheese, half for egg mixture)
- 2 tbsp milk (whole milk preferred)
- For the bread layers:
- 2 loaves cubed French bread (day-old works best)
- For the egg mixture:
- 1 cup blueberries
- 1 tsp cinnamon
- 2 cups milk (whole milk adds richness)
- 8 large eggs
- 1/2 tsp nutmeg
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a bowl, beat together cream cheese, powdered sugar, vanilla (half), and milk until smooth.
- Layer half of the cubed bread in the prepared dish. Spread cream cheese mixture over bread. Sprinkle with 1 cup blueberries. Top with remaining bread cubes.
- In another bowl, whisk together eggs, milk, cinnamon, nutmeg, and remaining vanilla. Pour evenly over the bread layers.
- Sprinkle the remaining 1 cup blueberries on top. Cover with foil and refrigerate overnight.
- In the morning, bake uncovered for 45–55 minutes or until set and golden brown.
- Serve warm, optionally with maple syrup or powdered sugar.
Notes
- Use fresh or frozen blueberries; if frozen, thaw and drain before using.
- Day-old bread absorbs the custard better for a perfect texture.
