Description

This Overnight Blueberry French Toast Casserole is a make-ahead breakfast delight featuring layers of soft French bread, sweet cream cheese, and fresh blueberries — perfect for busy mornings or brunch.


Ingredients

  • For the cream cheese mixture:
    • 1 cup blueberries
    • 8 oz cream cheese, softened
    • 1 cup powdered sugar
    • 1 tbsp vanilla extract (split: half for cream cheese, half for egg mixture)
    • 2 tbsp milk (whole milk preferred)
  • For the bread layers:
    • 2 loaves cubed French bread (day-old works best)
  • For the egg mixture:
    • 1 cup blueberries
    • 1 tsp cinnamon
    • 2 cups milk (whole milk adds richness)
    • 8 large eggs
    • 1/2 tsp nutmeg


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a bowl, beat together cream cheese, powdered sugar, vanilla (half), and milk until smooth.
  3. Layer half of the cubed bread in the prepared dish. Spread cream cheese mixture over bread. Sprinkle with 1 cup blueberries. Top with remaining bread cubes.
  4. In another bowl, whisk together eggs, milk, cinnamon, nutmeg, and remaining vanilla. Pour evenly over the bread layers.
  5. Sprinkle the remaining 1 cup blueberries on top. Cover with foil and refrigerate overnight.
  6. In the morning, bake uncovered for 45–55 minutes or until set and golden brown.
  7. Serve warm, optionally with maple syrup or powdered sugar.

Notes

  • Use fresh or frozen blueberries; if frozen, thaw and drain before using.
  • Day-old bread absorbs the custard better for a perfect texture.
