Description
This hearty one-pot beef dish features tender chunks of beef simmered in a rich, creamy sauce with sun-dried tomatoes and Parmesan. Perfect for an impressive and cozy dinner.
Ingredients
- 2 lbs beef stew meat (cut into cubes)
- 2 tbsp olive oil
- 1 medium onion (diced)
- 4 cloves garlic (minced)
- 1 cup beef broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (chopped)
- 1/4 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season beef with salt and pepper, then brown on all sides for 6–8 minutes. Remove and set aside.
- In the same pot, cook onion until softened (3–4 minutes). Add garlic and cook for 30 seconds.
- Pour in beef broth, scraping up browned bits from the bottom.
- Stir in heavy cream, sun-dried tomatoes, Parmesan, thyme, oregano, and red pepper flakes.
- Return beef to the pot, stir, cover, and simmer on low for 45–60 minutes until tender.
- Taste and adjust seasoning as needed.
- Garnish with fresh parsley and serve.

- Serve with pasta, mashed potatoes, or crusty bread.
- For halal version, ensure beef broth and Parmesan are halal-certified.
- Add cayenne pepper for extra heat if desired.
- Can be made ahead and reheated for deeper flavor.
