Description

This hearty one-pot beef dish features tender chunks of beef simmered in a rich, creamy sauce with sun-dried tomatoes and Parmesan. Perfect for an impressive and cozy dinner.


Ingredients

  • 2 lbs beef stew meat (cut into cubes)
  • 2 tbsp olive oil
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season beef with salt and pepper, then brown on all sides for 6–8 minutes. Remove and set aside.
  3. In the same pot, cook onion until softened (3–4 minutes). Add garlic and cook for 30 seconds.
  4. Pour in beef broth, scraping up browned bits from the bottom.
  5. Stir in heavy cream, sun-dried tomatoes, Parmesan, thyme, oregano, and red pepper flakes.
  6. Return beef to the pot, stir, cover, and simmer on low for 45–60 minutes until tender.
  7. Taste and adjust seasoning as needed.
  8. Garnish with fresh parsley and serve.

  • Serve with pasta, mashed potatoes, or crusty bread.
  • For halal version, ensure beef broth and Parmesan are halal-certified.
  • Add cayenne pepper for extra heat if desired.
