Description

One Pot Chicken Shawarma Rice is a bold and comforting Middle Eastern-inspired dish combining juicy marinated chicken with fragrant basmati rice, all cooked together in one pot for maximum flavor and minimal cleanup.


Ingredients

  • For the Chicken Marinade:
  • 1.5 lbs boneless, skinless chicken thighs, cut into strips
  • 2 tablespoons plain yogurt
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • Juice of half a lemon
  • For the Rice:
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1.5 cups basmati rice, rinsed and soaked
  • 2.5 cups chicken broth or water
  • 1/4 teaspoon turmeric
  • Salt to taste
  • Optional Garnish:
  • Fresh parsley
  • Toasted almonds or pine nuts
  • Yogurt sauce or tahini
  • Lemon wedges


Instructions

  1. In a bowl, mix yogurt, olive oil, garlic, spices, salt, pepper, and lemon juice. Add chicken and marinate for at least 30 minutes.
  2. Heat الزيت in a large pot and sear chicken for 2–3 minutes per side. Remove and set aside.
  3. In the same pot, sauté onion until soft, then add garlic and cook for 1 minute.
  4. Add drained rice and stir for 1–2 minutes. Mix in turmeric and salt.
  5. Pour in broth, bring to a boil, then return chicken to the pot.
  6. Cover and simmer on low heat for 18–20 minutes until rice is tender.
  7. Let rest 5–10 minutes, then fluff and serve.
