This One-Pot Autumn Beef Stew is cozy and hearty, packed with seasonal vegetables and tender beef simmered in a flavorful broth. Perfect for chilly days.

- For the Stew
- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 parsnips, diced
- 2–3 small potatoes, diced
- 1 cup butternut squash, cubed
- 2 cups beef broth
- 1 cup water
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt & pepper, to taste
- Optional Garnish
- Fresh parsley, chopped
- Crusty bread or dinner rolls
Instructions
- Brown Beef: Heat vegetable oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
- Sauté Aromatics: In the same pot, sauté onion and garlic until fragrant and softened.
- Add Vegetables & Liquid: Add carrots, parsnips, potatoes, butternut squash, tomato paste, thyme, rosemary, bay leaves, beef broth, and water. Stir to combine.
- Simmer: Return beef to the pot. Bring to a boil, then reduce heat and simmer 1–1.5 hours until beef and vegetables are tender.
- Season: Add salt and pepper to taste. Remove bay leaves before serving.
- Serve: Garnish with fresh parsley and serve with crusty bread or rolls.
Notes
- Use chuck roast or stew meat for best results.
- Adjust vegetables to seasonal availability.
- Stew tastes even better the next day and can be frozen for later meals.
