Description

This One-Pot Autumn Beef Stew is cozy and hearty, packed with seasonal vegetables and tender beef simmered in a flavorful broth. Perfect for chilly days.


Ingredients

    • For the Stew
    • 1 lb beef stew meat, cubed
    • 2 tbsp vegetable oil
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 2 carrots, sliced
    • 2 parsnips, diced
    • 23 small potatoes, diced
    • 1 cup butternut squash, cubed
    • 2 cups beef broth
    • 1 cup water
    • 2 tbsp tomato paste
    • 1 tsp dried thyme
    • 1 tsp dried rosemary
    • 2 bay leaves
    • Salt & pepper, to taste

 

  • Optional Garnish
  • Fresh parsley, chopped
  • Crusty bread or dinner rolls


Instructions

  1. Brown Beef: Heat vegetable oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté onion and garlic until fragrant and softened.
  3. Add Vegetables & Liquid: Add carrots, parsnips, potatoes, butternut squash, tomato paste, thyme, rosemary, bay leaves, beef broth, and water. Stir to combine.
  4. Simmer: Return beef to the pot. Bring to a boil, then reduce heat and simmer 1–1.5 hours until beef and vegetables are tender.
  5. Season: Add salt and pepper to taste. Remove bay leaves before serving.
  6. Serve: Garnish with fresh parsley and serve with crusty bread or rolls.
