Description

This miso glazed eggplant is soft, tender, and creamy inside with a rich umami-packed glaze. Perfectly baked in the air fryer or oven, this simple yet elegant dish is full of flavor and incredibly easy to make.


Ingredients

  • 1 large eggplant
  • 3 tbsp white miso
  • 2 tbsp mirin
  • 2 tbsp sake (optional)
  • 1 tbsp grapeseed oil
  • 1 tbsp honey
  • 1 tbsp dark soy sauce
  • 1 clove garlic, minced
  • For garnish: toasted sesame seeds, chopped green onions


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, whisk together miso, mirin, sake (if using), oil, honey, soy sauce, and garlic.
  3. Cut eggplant into 2-inch thick rounds.
  4. Score the flesh diagonally in a crisscross pattern.
  5. Spread the miso glaze generously over each piece.
  6. Air fry for 15 minutes until tender and caramelized.
  7. Garnish with sesame seeds and green onions before serving.

Notes

  • Oven method: Bake at 425°F (220°C) for 25 minutes, then broil 5 minutes until caramelized.
