Description
This miso glazed eggplant is soft, tender, and creamy inside with a rich umami-packed glaze. Perfectly baked in the air fryer or oven, this simple yet elegant dish is full of flavor and incredibly easy to make.
Ingredients
- 1 large eggplant
- 3 tbsp white miso
- 2 tbsp mirin
- 2 tbsp sake (optional)
- 1 tbsp grapeseed oil
- 1 tbsp honey
- 1 tbsp dark soy sauce
- 1 clove garlic, minced
- For garnish: toasted sesame seeds, chopped green onions
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, whisk together miso, mirin, sake (if using), oil, honey, soy sauce, and garlic.
- Cut eggplant into 2-inch thick rounds.
- Score the flesh diagonally in a crisscross pattern.
- Spread the miso glaze generously over each piece.
- Air fry for 15 minutes until tender and caramelized.
- Garnish with sesame seeds and green onions before serving.
Notes
- Oven method: Bake at 425°F (220°C) for 25 minutes, then broil 5 minutes until caramelized.
- Watch carefully while broiling to prevent burning.
