Ingredients
- 1 (8-ounce) package gluten-free pasta
- 3 cups boiling water
- 1 can vegetable broth
- 1 can fire-roasted tomatoes
- 1 can artichoke hearts, drained
- 1 can black olives
- 1/2 red (or purple) onion, sliced
- Fresh thyme (or 1 tsp dried thyme)
- 1 tsp cumin
- Salt and black pepper, to taste
- Parmesan cheese, optional (for serving)
- Fresh basil, optional (for serving)
Instructions
- Bring 3 cups of water to a boil in a large pot.
- Add pasta, vegetable broth, sliced onion, fire-roasted tomatoes, artichokes, olives, thyme, and cumin.
- Boil over high heat, stirring occasionally to prevent sticking.
- As liquid reduces, it will form a creamy sauce. Add hot water 1/2 cup at a time if needed.
- Once pasta is cooked, plate immediately to prevent overcooking.
- Garnish with basil or parmesan cheese if desired and serve hot.
Notes
- Use regular pasta if not gluten-free, adjusting cook time.
- Dried thyme or Italian seasoning works if fresh thyme is unavailable.
