- 1 lb ground chicken
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1 tsp dried oregano
- Zest of 1 lemon
- 1 large egg, lightly beaten
- 1/2 cup breadcrumbs (panko or regular)

- Add lemon zest, egg, breadcrumbs, and feta (if using). Season with salt and pepper. Mix gently until combined.
- Divide mixture into 6–8 patties, about 1/2-inch thick.
- Heat olive oil in a skillet over medium-high heat.
- Cook patties 4–5 minutes per side until golden brown and internal temperature reaches 165°F.

- Serve warm with tzatziki, Greek yogurt sauce, salad, or pita.
Notes
- Do not overmix the patties to keep them tender.
