Ingredients
- 2 cups cooked and diced chicken breast
- 8 oz penne or rotini pasta
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup finely chopped red onion
- 1 cup feta cheese crumbles
- 1/2 cup pitted Kalamata olives
- 3 tbsp extra virgin olive oil
- Lemon juice, to taste
Instructions
- Cook seasoned chicken in olive oil until golden and cooked through. Rest, then dice.
- Boil pasta according to package directions until al dente; drain.
- Chop tomatoes, cucumber, and red onion into bite-sized pieces.
- In a large bowl, combine pasta, chicken, vegetables, feta, and olives.
- Drizzle with olive oil and lemon juice; toss gently to combine.
- Chill before serving to allow flavors to develop.
