Ingredients

  • 2 cups cooked and diced chicken breast
  • 8 oz penne or rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup finely chopped red onion
  • 1 cup feta cheese crumbles
  • 1/2 cup pitted Kalamata olives
  • 3 tbsp extra virgin olive oil
  • Lemon juice, to taste


Instructions

  1. Cook seasoned chicken in olive oil until golden and cooked through. Rest, then dice.
  2. Boil pasta according to package directions until al dente; drain.
  3. Chop tomatoes, cucumber, and red onion into bite-sized pieces.
  4. In a large bowl, combine pasta, chicken, vegetables, feta, and olives.
  5. Drizzle with olive oil and lemon juice; toss gently to combine.
