Description

A creamy and delicious Marry Me Chicken Pasta Salad featuring cheese tortellini, shredded chicken, fresh vegetables, and a rich parmesan dressing—perfect for gatherings and meal prep.


Ingredients

  • 600 g cheese tortellini, cooked and cooled
  • 300 g cooked chicken, shredded
  • 150 g cherry tomatoes, halved
  • 60 g baby spinach
  • 150 g mayonnaise
  • 60 g grated parmesan cheese
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp chopped basil
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 23 tbsp milk


Instructions

  1. Whisk mayonnaise, parmesan, sun-dried tomatoes, basil, garlic powder, salt, and pepper. Add milk gradually until pourable.
  2. Place tortellini, chicken, cherry tomatoes, and spinach in a large bowl.
  3. Pour dressing over ingredients and toss until evenly coated.
  4. Cover and refrigerate for 30 minutes before serving.

Notes

  • Substitute chicken with chickpeas or grilled vegetables for a vegetarian option.
