Ingredients

    • Muffin Batter:
    • 2 cups all-purpose flour
    • 1 tbsp baking powder
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp ground cinnamon
    • 3/4 cup brown sugar
    • 1/2 cup maple syrup
    • 1 cup buttermilk
    • 2 eggs
    • 1 cup chopped pecans
    • 1/2 cup unsalted butter, melted

 

  • Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, cubed
  • 1/2 cup chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin.
  2. Whisk together dry ingredients for the batter: flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, combine brown sugar, maple syrup, buttermilk, eggs, and melted butter; whisk until smooth.
  4. Fold wet ingredients into dry mixture until just combined, then stir in chopped pecans.
  5. For the streusel, mix flour, brown sugar, cinnamon, and butter until crumbly. Fold in additional pecans.
  6. Divide batter into muffin cups and top with streusel.
  7. Bake for 18–22 minutes until golden brown.
  8. Cool muffins in the tin for 5 minutes, then transfer to a wire rack.
