Description

Ingredients

  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, grated
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 tsp mustard powder
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions until al dente. Drain and set aside.
  2. Make the roux: In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly, to remove the raw flour taste.
  3. Whisk in the milk: Gradually pour in the milk while whisking to avoid lumps. Continue stirring until the sauce thickens and begins to bubble, about 5 minutes.
  4. Add the cheese: Remove from heat and stir in the cheddar cheese and mustard powder until smooth and creamy. Season with salt and pepper to taste.
  5. Combine and serve: Add the cooked macaroni to the cheese sauce and stir to coat evenly. Serve warm and enjoy!

Notes

  • For extra creaminess, mix in a splash of heavy cream or a handful of mozzarella cheese.
  • Add a crunchy topping: sprinkle buttered breadcrumbs or extra cheddar over the top and broil for 2–3 minutes until golden.
