Description

This hearty Lentil Sausage Soup is packed with Italian sausage, tender lentils, and vegetables simmered in a deeply savory broth. Cozy, filling, and perfect for both stovetop and slow cooker meals.


Ingredients

  • Seasonings
  • 1 tsp dried basil
  • 1/2 tsp dried parsley
  • 1/2 tsp oregano
  • 1/2 tsp mustard powder
  • 1/4 tsp black pepper
  • Soup
  • 1 lb Italian sausage (hot or mild)
  • 1 small yellow onion, diced
  • 1 cup carrots, diced
  • 1/2 cup celery, diced
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp flour
  • 1 tbsp tomato paste
  • 6 cups chicken broth
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce
  • 1 cup dry brown lentils, rinsed
  • 1 bay leaf
  • 1 (14.5 oz) can diced tomatoes, drained


Instructions

  1. Cook sausage in a large pot over medium heat until browned and cooked through. Set aside and reserve 1 tbsp drippings.
  2. Add reserved drippings and butter to the pot. Add onion, carrots, and celery; cook for 4 minutes. Add garlic and cook 1 minute.
  3. Stir in flour and tomato paste; cook for 2 minutes.
  4. Gradually add chicken and beef broth, scraping the bottom of the pot.
  5. Add Worcestershire sauce, hot sauce, lentils, bay leaf, and seasonings. Bring to a boil, then reduce to a simmer.
  6. Cover partially and simmer for 45 minutes, stirring occasionally.
  7. Add sausage and diced tomatoes. Simmer for 10 more minutes.
  8. Adjust thickness with additional broth if needed and serve.

Notes

  • Kale can be added during the last 5 minutes; spinach during the last 3 minutes.
  • Green lentils may be used but require longer cooking time.
  • Low-sodium broth is recommended due to sausage saltiness.
  • Ground turkey may be substituted for a lighter option.
  • Slow cooker method available using cooked sausage.
