Description

Ingredients

  • Beef and Broth
  • 2 lb beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups water
  • Sauce and Seasonings
  • 1 cup soy sauce
  • ¼ cup brown sugar
  • 2 tbsp minced ginger
  • 4 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 tsp black pepper
  • 1 tbsp gochujang (Korean chili paste)
  • Noodles and Garnishes
  • 1 lb fresh or dried noodles (udon or ramen)
  • 3 green onions, sliced
  • Sesame seeds (optional)
  • Fresh cilantro (optional)


Instructions

  1. Season beef chunks evenly with black pepper.
  2. In a bowl, mix beef broth, water, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until sugar dissolves.
  3. Place beef in the slow cooker and pour sauce over it.
  4. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until beef is tender.
  5. Cook noodles according to package instructions about 15–20 minutes before beef is done. Drain and set aside.
  6. Add noodles to the slow cooker and gently stir to combine.
  7. Serve hot, garnished with green onions, sesame seeds, and cilantro if desired.

Notes

  • Increase gochujang or add red pepper flakes for more heat.
  • Udon gives a chewy texture; ramen is lighter.
  • Beef chuck can be replaced with brisket or short ribs.
  • Add vegetables like bok choy or mushrooms in the last hour if desired.
  • Store leftovers in the fridge for up to 3 days.
