Ingredients
- Beef and Broth
- 2 lb beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 2 cups water
- Sauce and Seasonings
- 1 cup soy sauce
- ¼ cup brown sugar
- 2 tbsp minced ginger
- 4 cloves garlic, minced
- 1 tbsp sesame oil
- 1 tsp black pepper
- 1 tbsp gochujang (Korean chili paste)
- Noodles and Garnishes
- 1 lb fresh or dried noodles (udon or ramen)
- 3 green onions, sliced
- Sesame seeds (optional)
- Fresh cilantro (optional)
Instructions
- Season beef chunks evenly with black pepper.
- In a bowl, mix beef broth, water, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until sugar dissolves.
- Place beef in the slow cooker and pour sauce over it.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until beef is tender.
- Cook noodles according to package instructions about 15–20 minutes before beef is done. Drain and set aside.
- Add noodles to the slow cooker and gently stir to combine.
- Serve hot, garnished with green onions, sesame seeds, and cilantro if desired.
Notes
- Increase gochujang or add red pepper flakes for more heat.
- Udon gives a chewy texture; ramen is lighter.
- Beef chuck can be replaced with brisket or short ribs.
- Add vegetables like bok choy or mushrooms in the last hour if desired.
