Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups water
  • 1 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp ginger, minced
  • 4 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 tsp black pepper
  • 1 tbsp gochujang (Korean chili paste)
  • 1 pound fresh or dried noodles (udon or ramen)
  • 3 green onions, sliced (for garnish)
  • Sesame seeds (optional)
  • Fresh cilantro (optional)


Instructions

  1. Season beef chunks with black pepper.
  2. Mix beef broth, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until sugar dissolves.
  3. Add beef to slow cooker and pour sauce over top.
  4. Cook on low 6–8 hours or high 3–4 hours until beef is tender.
  5. 15–20 minutes before serving, cook noodles according to package instructions and drain.
  6. Add cooked noodles to slow cooker, stir gently, and allow them to absorb some broth.
  7. Scoop beef and noodles into bowls. Garnish with green onions, sesame seeds, and cilantro.
