Ingredients
- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 2 cups water
- 1 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp ginger, minced
- 4 cloves garlic, minced
- 1 tbsp sesame oil
- 1 tsp black pepper
- 1 tbsp gochujang (Korean chili paste)
- 1 pound fresh or dried noodles (udon or ramen)
- 3 green onions, sliced (for garnish)
- Sesame seeds (optional)
- Fresh cilantro (optional)
Instructions
- Season beef chunks with black pepper.
- Mix beef broth, soy sauce, brown sugar, ginger, garlic, sesame oil, and gochujang until sugar dissolves.
- Add beef to slow cooker and pour sauce over top.
- Cook on low 6–8 hours or high 3–4 hours until beef is tender.
- 15–20 minutes before serving, cook noodles according to package instructions and drain.
- Add cooked noodles to slow cooker, stir gently, and allow them to absorb some broth.
- Scoop beef and noodles into bowls. Garnish with green onions, sesame seeds, and cilantro.
