Description

Ingredients
- 1 large bunch of kale
- ½ cup slivered almonds, toasted
- 1 shallot, minced
- 4 tablespoons lemon juice
- 2 tablespoons white wine vinegar
- 4 tablespoons olive oil
- 2/3 cup finely grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Wash and dry kale, then chop or slice into bite-sized pieces.
- In a large bowl, toss kale with slivered almonds and set aside.
- In a small bowl, whisk together shallot, lemon juice, vinegar, and olive oil.
- Toss kale with desired amount of vinaigrette.
- Sprinkle with Parmesan cheese and toss to coat. Season with salt and pepper to taste.
- Serve immediately.
