Ingredients
- 4 slices bread
- 1 cup baked beans (canned or homemade)
- 1 tablespoon oil
- 1 tablespoon butter
- 4 chicken sausages
- 2 medium tomatoes, halved
- 8 mushrooms, sliced
- 4 large eggs
- Salt, to taste
- Black pepper, to taste
- 2 spring onions, chopped
Instructions
- Heat oil in a skillet over medium heat. Cook sausages until browned and cooked through.
- In the same skillet, sauté mushrooms and tomatoes until tender.
- In another pan, toast the bread slices with butter.
- Cook eggs to your preference (fried, scrambled, or poached).
- Warm baked beans in a small saucepan.
- Assemble by placing toast on plates, add sausages, eggs, mushrooms, tomatoes, and pour beans on the side.
- Garnish with chopped spring onions and season with salt and black pepper.
Notes
- For extra flavor, add baked beans with a touch of Worcestershire sauce.
