Ingredients

  • 4 slices bread
  • 1 cup baked beans (canned or homemade)
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 4 chicken sausages
  • 2 medium tomatoes, halved
  • 8 mushrooms, sliced
  • 4 large eggs
  • Salt, to taste
  • Black pepper, to taste
  • 2 spring onions, chopped


Instructions

  1. Heat oil in a skillet over medium heat. Cook sausages until browned and cooked through.
  2. In the same skillet, sauté mushrooms and tomatoes until tender.
  3. In another pan, toast the bread slices with butter.
  4. Cook eggs to your preference (fried, scrambled, or poached).
  5. Warm baked beans in a small saucepan.
  6. Assemble by placing toast on plates, add sausages, eggs, mushrooms, tomatoes, and pour beans on the side.
  7. Garnish with chopped spring onions and season with salt and black pepper.
