- For the Chicken:
- 2 chicken breasts, sliced
- 2 tbsp honey
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp paprika
- Salt & pepper, to taste

- For the Rice Layer:
- 2 cups cooked jasmine rice
- 1 tbsp olive oil
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
- Salt, to taste
- For the Avocado Topping:
- 1 avocado, diced
- 1 tbsp lime juice
- 1 tbsp chopped red onion
- 1 tbsp chopped cilantro
- Salt & pepper, to taste
Instructions
- In a skillet, heat olive oil over medium heat and cook sliced chicken with garlic, honey, lime juice, paprika, salt, and pepper until fully cooked and lightly caramelized.
- In a separate bowl, mix cooked jasmine rice with olive oil, chopped cilantro, lime juice, and salt.
- In another bowl, combine diced avocado, red onion, chopped cilantro, lime juice, salt, and pepper.
- To assemble, layer rice on a serving plate, then top with cooked chicken, and finish with avocado mixture.
- Serve immediately, garnished with extra cilantro or lime wedges if desired.
Notes
- Use cooked chicken ahead of time for quicker assembly.
- Jasmine rice can be substituted with brown rice or quinoa for a healthier twist.
- Stacked presentation works best using a ring mold for neat layers.
