Description

Honey Lime Chicken & Avocado Rice Stack is a fresh, vibrant dish featuring sweet and tangy chicken, seasoned rice, and creamy avocado, layered beautifully for an impressive presentation.


Ingredients

    • For the Chicken:
    • 2 chicken breasts, sliced
    • 2 tbsp honey
    • 1 tbsp lime juice
    • 1 tbsp olive oil
    • 1 clove garlic, minced
    • 1/2 tsp paprika
    • Salt & pepper, to taste

 

    • For the Rice Layer:
    • 2 cups cooked jasmine rice
    • 1 tbsp olive oil
    • 2 tbsp chopped cilantro
    • 1 tbsp lime juice
    • Salt, to taste

 

  • For the Avocado Topping:
  • 1 avocado, diced
  • 1 tbsp lime juice
  • 1 tbsp chopped red onion
  • 1 tbsp chopped cilantro
  • Salt & pepper, to taste


Instructions

  1. In a skillet, heat olive oil over medium heat and cook sliced chicken with garlic, honey, lime juice, paprika, salt, and pepper until fully cooked and lightly caramelized.
  2. In a separate bowl, mix cooked jasmine rice with olive oil, chopped cilantro, lime juice, and salt.
  3. In another bowl, combine diced avocado, red onion, chopped cilantro, lime juice, salt, and pepper.
  4. To assemble, layer rice on a serving plate, then top with cooked chicken, and finish with avocado mixture.
  5. Serve immediately, garnished with extra cilantro or lime wedges if desired.

Notes

  • Use cooked chicken ahead of time for quicker assembly.
  • Jasmine rice can be substituted with brown rice or quinoa for a healthier twist.
  • Stacked presentation works best using a ring mold for neat layers.
