Description
This honey garlic chicken and sweet potato one-pan dinner is a quick, flavorful, and balanced meal featuring sticky glazed chicken, roasted sweet potatoes, and tender green beans.
Ingredients
- For the Chicken & Marinade:
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt & black pepper to taste
- For the Vegetables:
- 2 large sweet potatoes (peeled & cubed)
- 1 lb green beans (trimmed)
- Olive oil (for roasting)
Instructions
- Make Marinade: Whisk honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a bowl.
- Marinate Chicken: Coat chicken in marinade and refrigerate for at least 30 minutes (or up to 8 hours).
- Preheat Oven: Set oven to 200°C (400°F).
- Roast Sweet Potatoes: Toss sweet potatoes with olive oil, salt, and pepper. Roast for 15 minutes.
- Add Chicken & Veggies: Push potatoes aside, add chicken and green beans to the tray.
- Bake: Drizzle remaining marinade over everything and bake for 20–25 minutes until chicken is fully cooked (165°F internal temp).
- Serve: Plate hot and enjoy as a complete one-pan dinner.
