Description

This honey garlic chicken and sweet potato one-pan dinner is a quick, flavorful, and balanced meal featuring sticky glazed chicken, roasted sweet potatoes, and tender green beans.


Ingredients

  • For the Chicken & Marinade:
  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt & black pepper to taste
  • For the Vegetables:
  • 2 large sweet potatoes (peeled & cubed)
  • 1 lb green beans (trimmed)
  • Olive oil (for roasting)


Instructions

  1. Make Marinade: Whisk honey, soy sauce, garlic, olive oil, paprika, thyme, salt, and pepper in a bowl.
  2. Marinate Chicken: Coat chicken in marinade and refrigerate for at least 30 minutes (or up to 8 hours).
  3. Preheat Oven: Set oven to 200°C (400°F).
  4. Roast Sweet Potatoes: Toss sweet potatoes with olive oil, salt, and pepper. Roast for 15 minutes.
  5. Add Chicken & Veggies: Push potatoes aside, add chicken and green beans to the tray.
  6. Bake: Drizzle remaining marinade over everything and bake for 20–25 minutes until chicken is fully cooked (165°F internal temp).
  7. Serve: Plate hot and enjoy as a complete one-pan dinner.
