Description

A rich, savory steak and Guinness pie with a flaky golden crust, tender beef, and flavorful gravy infused with Guinness. Perfect for cozy nights and family dinners.


Ingredients

  • 2 pounds beef chuck, diced
  • ¼ cup all-purpose flour
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup Guinness beer
  • 2 cups beef stock
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup frozen peas
  • 1 egg yolk
  • 1 sheet puff pastry


Instructions

  1. Toss beef chunks in flour, salt, and pepper until evenly coated.
  2. Heat olive oil in a skillet or Dutch oven over medium-high heat. Sear beef in batches 3–4 minutes per side. Remove and set aside.
  3. Add onion, carrots, celery, and garlic to the same skillet; cook 5 minutes until softened.
  4. Add tomato paste, thyme, bay leaves, and Guinness; stir and simmer 2 minutes. Pour in beef stock, scraping bottom for browned bits.
  5. Return beef to skillet; reduce heat, cover, and simmer 1.5 hours until beef is tender and gravy thickens.
  6. Stir in frozen peas during last 5 minutes of cooking.
  7. Roll out puff pastry to fit pie dish. Preheat oven to 400°F (200°C).
  8. Pour beef mixture into pie dish. Cover with puff pastry, seal edges, trim excess, and cut slits on top.
  9. Brush pastry with egg yolk and bake 25–30 minutes until golden and crisp.
  10. Let cool 5 minutes before serving. Slice and enjoy.

  • Browning the beef properly enhances flavor.
  • Keep puff pastry chilled until ready to use.
  • If gravy is too thin, simmer uncovered 5 extra minutes to thicken.
  • Experiment with herbs like rosemary or parsley for a different aroma.
