Ingredients
- 1 cup Greek yogurt
- 2 eggs
- 1/3 cup honey or maple syrup
- 1/4 cup olive oil or melted coconut oil
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat or oat flour
- 1/2 cup vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup blueberries
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- Whisk together Greek yogurt, eggs, honey or maple syrup, oil, and vanilla extract.
- In a separate bowl, mix flour, protein powder, baking powder, baking soda, cinnamon, and salt.
- Gently combine wet and dry ingredients without overmixing.
- Fold in blueberries carefully.
- Divide batter evenly among muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes, until a toothpick inserted comes out clean.
