Ingredients

  • 1 cup Greek yogurt
  • 2 eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat or oat flour
  • 1/2 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup blueberries


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. Whisk together Greek yogurt, eggs, honey or maple syrup, oil, and vanilla extract.
  3. In a separate bowl, mix flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  4. Gently combine wet and dry ingredients without overmixing.
  5. Fold in blueberries carefully.
  6. Divide batter evenly among muffin cups, filling about 3/4 full.
  7. Bake for 18–22 minutes, until a toothpick inserted comes out clean.
