Description

A viral high-protein bowl with taco-seasoned beef, roasted sweet potatoes, cottage cheese, and hot honey drizzle. Perfect for meal prep with 33–38g protein per serving.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil (1 tbsp for potatoes, 1 tbsp for beef)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt & pepper to taste
  • 1 lb lean ground beef (93% preferred)
  • 1 medium yellow onion, diced
  • 1 packet taco seasoning or 2 tbsp homemade
  • 1/4 cup water for simmering beef
  • 1 medium avocado, sliced (fresh when serving)
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp hot honey (about 1/2 tbsp per bowl)
  • Optional toppings: chopped cilantro, red pepper flakes, lime wedges, sliced green onion


Instructions

  1. Preheat oven to 400°F. Toss sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread on parchment-lined baking sheet. Roast 40–45 minutes, stirring halfway, until caramelized and tender.
  2. While potatoes roast, heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Cook diced onion 5–7 minutes until soft. Add ground beef, breaking into crumbles, cook 8–10 minutes until browned.
  3. Sprinkle taco seasoning over beef, add 1/4 cup water. Simmer 2–3 minutes until thickened. Remove from heat.
  4. Assemble bowls: layer sweet potatoes, seasoned beef, 1/4–1/2 cup cottage cheese, avocado slices. Drizzle ~1/2 tbsp hot honey per bowl.
  5. Top with optional cilantro, green onions, or red pepper flakes. Serve immediately.

Notes

Store components separately in airtight containers: beef & sweet potatoes last 3–4 days refrigerated. Avocado fresh. Freezing: cooked beef up to 3 months; sweet potatoes lose some crispness. Variations: ground turkey/chicken for lighter option; cauliflower rice or zucchini noodles for low-carb. Blend cottage cheese smooth if preferred. Time-saving tip: roast sweet potatoes first, cook beef while roasting.
