Description

Grilled Goodness Rice Stack combines flavorful grilled chicken, shrimp, and veggies layered over seasoned rice, topped with saucy corn. Bold flavors, stacked high, and total perfection for a satisfying meal.


Ingredients

  • Seasoned Rice:
  • 1 cup cooked jasmine or long-grain rice
  • 1 tsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt & black pepper to taste
  • Grilled Chicken:
  • 1 boneless, skinless chicken breast
  • 1 tsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • Salt & black pepper to taste
  • Grilled Shrimp:
  • 12 large shrimp, peeled & deveined
  • 1 tsp olive oil
  • 1/2 tsp Cajun or chili seasoning
  • Pinch of salt
  • Grilled Veggies:
  • 1 cup zucchini & bell peppers, sliced
  • 1/2 small red onion, sliced
  • 1 tsp olive oil
  • Salt & black pepper to taste
  • Saucy Corn:
  • 1 cup corn kernels
  • 1 tbsp butter
  • 1 tbsp mayonnaise
  • 1 tsp lime juice
  • 1/4 tsp chili powder
  • Salt to taste
  • Optional Garnish: Fresh cilantro or parsley, lime wedges


Instructions

  1. Season the Rice: Fluff warm rice with olive oil, smoked paprika, garlic powder, salt, and pepper. Set aside.
  2. Grill the Chicken: Rub with olive oil, paprika, onion powder, salt, and pepper. Grill 5–6 minutes per side until cooked through. Slice.
  3. Grill the Shrimp: Toss with olive oil, Cajun seasoning, and salt. Grill 2–3 minutes per side until pink and lightly charred.
  4. Grill the Veggies: Toss with olive oil, salt, and pepper. Grill 4–5 minutes until tender with grill marks.
  5. Make the Saucy Corn: Melt butter in a skillet, add corn, cook 3–4 minutes. Remove from heat and stir in mayonnaise, lime juice, chili powder, and salt.
  6. Stack & Serve: Layer rice in a bowl, stack chicken, shrimp, veggies, and saucy corn. Garnish with herbs and lime.
