Grilled Goodness Rice Stack combines flavorful grilled chicken, shrimp, and veggies layered over seasoned rice, topped with saucy corn. Bold flavors, stacked high, and total perfection for a satisfying meal.
Ingredients
- Seasoned Rice:
- 1 cup cooked jasmine or long-grain rice
- 1 tsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- Salt & black pepper to taste
- Grilled Chicken:
- 1 boneless, skinless chicken breast
- 1 tsp olive oil
- 1/2 tsp paprika
- 1/2 tsp onion powder
- Salt & black pepper to taste
- Grilled Shrimp:
- 12 large shrimp, peeled & deveined
- 1 tsp olive oil
- 1/2 tsp Cajun or chili seasoning
- Pinch of salt
- Grilled Veggies:
- 1 cup zucchini & bell peppers, sliced
- 1/2 small red onion, sliced
- 1 tsp olive oil
- Salt & black pepper to taste
- Saucy Corn:
- 1 cup corn kernels
- 1 tbsp butter
- 1 tbsp mayonnaise
- 1 tsp lime juice
- 1/4 tsp chili powder
- Salt to taste
- Optional Garnish: Fresh cilantro or parsley, lime wedges
Instructions
- Season the Rice: Fluff warm rice with olive oil, smoked paprika, garlic powder, salt, and pepper. Set aside.
- Grill the Chicken: Rub with olive oil, paprika, onion powder, salt, and pepper. Grill 5–6 minutes per side until cooked through. Slice.
- Grill the Shrimp: Toss with olive oil, Cajun seasoning, and salt. Grill 2–3 minutes per side until pink and lightly charred.
- Grill the Veggies: Toss with olive oil, salt, and pepper. Grill 4–5 minutes until tender with grill marks.
- Make the Saucy Corn: Melt butter in a skillet, add corn, cook 3–4 minutes. Remove from heat and stir in mayonnaise, lime juice, chili powder, and salt.
- Stack & Serve: Layer rice in a bowl, stack chicken, shrimp, veggies, and saucy corn. Garnish with herbs and lime.
