Ingredients

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • For the Broccoli:
  • 4 cups broccoli florets (fresh or frozen)
  • For the Creamy Sauce:
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup Parmesan cheese
  • 2 tbsp lemon juice
  • Salt & pepper to taste
  • For the Base:
  • 2 cups cooked rice or quinoa


Instructions

  1. Season the Chicken: Season chicken breasts with salt, pepper, and a drizzle of olive oil. Let marinate for 10 minutes.
  2. Grill the Chicken: Preheat grill to medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked. Let rest, then slice.
  3. Cook the Broccoli: Steam or blanch broccoli for 3–4 minutes until tender-crisp. Drain well.
  4. Make the Sauce: In a skillet, sauté garlic in olive oil for 1 minute. Add cream and bring to a gentle simmer. Stir in Parmesan and lemon juice until smooth. Season with salt and pepper.
  5. Assemble the Bowls: Add rice or quinoa to bowls, then top with sliced chicken and broccoli. Drizzle with creamy garlic sauce.
  6. Serve: Garnish with extra Parmesan or fresh herbs if desired. Serve warm.
