Ingredients
- 8 oz dry fettuccine pasta
- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 3 garlic cloves, crushed
- 1 can (3.75 oz) sardines in tomato sauce
- 1/4 cup Parmesan cheese, freshly grated
- Juice of 1 lemon
- Red pepper flakes, to taste
- Salt to taste
Instructions
- Cook pasta in salted water until al dente (about 8 minutes).
- Heat olive oil in a skillet and sauté onion for 3 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in sardines with their tomato sauce and heat for 3 minutes.
- Drain pasta and add to the skillet. Toss well and let sit off heat, covered, for 3 minutes.
- Finish with lemon juice, Parmesan, and red pepper flakes. Serve immediately.
Notes
- Reserve a bit of pasta water to loosen the sauce if needed.
- Let pasta rest in the sauce before serving for better flavor.
