Description

Quick and easy homemade S’mores Rolls filled with gooey chocolate, toasted marshmallows, and topped with meringue for a decadent dessert experience.


Ingredients

  • 1 cup lukewarm milk
  • 1/4 cup lukewarm water
  • 2 1/4 tsp instant yeast (1 packet)
  • 1/4 cup granulated sugar
  • 3 3/4 cup all-purpose flour
  • 4 tbsp unsalted butter, divided
  • 1 tsp salt
  • 1/8 cup unsweetened cocoa powder
  • 1/8 cup heavy whipping cream
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup graham cracker crumbs
  • 2 large egg whites, room temperature
  • 1/2 cup granulated sugar
  • 1/8 tsp cream of tartar
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract, divided


Instructions

  1. DOUGH: In a stand mixer, combine milk, water, yeast, sugar, flour, melted butter, and salt. Knead 6-8 minutes until smooth and elastic. Cover and rest 15 minutes.
  2. FILLING: In a saucepan over low-medium heat, whisk cocoa powder, cream, chocolate chips, sugar, butter, vanilla, and pinch of salt until smooth. Cool and mix in graham cracker crumbs.
  3. ASSEMBLY: Roll dough into 10″x16″ rectangle. Brush with melted butter, spread filling evenly, sprinkle graham crumbs, roll tightly, slice into 8–10 pieces, place in greased baking pan.
  4. BAKE: Preheat oven to 350°F (175°C). Bake 25–28 minutes until golden. Cool 10 minutes before adding meringue.
  5. MERINGUE: In double boiler, combine egg whites and sugar, whisk until warm. Beat in stand mixer until stiff peaks form with cream of tartar, salt, and vanilla.
  6. FINAL: Spread meringue on rolls and toast with kitchen torch or broiler until golden. Serve immediately.
