Description

Gnocchi Bolognese is classic comfort food made with soft pillowy gnocchi tossed in a rich tomato and red wine beef sauce. Hearty, cozy, and perfect for an easy but satisfying dinner.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, finely diced
  • 1 medium carrot, finely diced
  • 2 celery stalks, finely diced
  • 2 large garlic cloves, finely chopped
  • 1 lb (500 g) lean ground beef
  • 1/2 cup (100 ml) dry red wine
  • 2 tbsp tomato paste
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1/4 tsp red chili flakes
  • 2 cans (14 oz / 400 g each) crushed tomatoes
  • 1 cup (250 ml) beef stock
  • 2 bay leaves
  • 1 1/2 lb (900 g) gnocchi
  • 1/3 cup grated Parmesan cheese
  • 68 fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large pan or Dutch oven over medium heat. Add onion, carrot, and celery and cook for 8–10 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add ground beef and cook for 5–6 minutes, breaking it up until browned.
  4. Pour in red wine and cook for 1–2 minutes until the alcohol evaporates.
  5. Stir in tomato paste, thyme, rosemary, and red chili flakes.
  6. Add crushed tomatoes, beef stock, and bay leaves. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes, stirring occasionally.
  7. Meanwhile, cook gnocchi according to package instructions in salted boiling water.
  8. Stir cooked gnocchi, Parmesan, and fresh basil into the sauce.
  9. Season with salt and pepper and serve immediately with extra Parmesan if desired.

Notes

  • Use lean ground beef for a lighter sauce.
  • Let the sauce simmer uncovered for deeper flavor.
  • Leftovers store well in the fridge for up to 3 days.
