Ingredients

  • 12 oz spaghetti
  • 1 lb ground beef (85/15)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • Salt and freshly ground black pepper, to taste
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • 4 cloves garlic, finely minced
  • ⅓ cup freshly grated Parmesan cheese
  • 1 cup whole milk
  • ¾ cup heavy cream
  • 1½ tsp cornstarch
  • 1¼ cups shredded whole-milk mozzarella
  • ¼ tsp white pepper (optional)


Instructions

  1. Cook spaghetti in well-salted boiling water until just al dente. Drain and set aside.
  2. Heat olive oil in a wide skillet over medium-high heat. Add ground beef, season with salt, pepper, smoked paprika, garlic powder, and oregano, and cook until deeply browned.
  3. Add butter and garlic, stirring until fragrant. Stir in Parmesan until melted.
  4. Whisk cornstarch into milk until smooth, then add to skillet with heavy cream, stirring as the sauce thickens.
  5. Lower heat and add mozzarella gradually, stirring until melted and glossy. Season with white pepper if using.
  6. Add cooked spaghetti and toss gently until fully coated.
  7. Remove from heat and let rest for 1 minute before serving.

Notes

  • Use whole-milk mozzarella for best melt.
  • Letting the pasta rest helps the sauce cling beautifully.
