Ingredients
- 12 oz spaghetti
- 1 lb ground beef (85/15)
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- Salt and freshly ground black pepper, to taste
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp dried oregano
- 4 cloves garlic, finely minced
- ⅓ cup freshly grated Parmesan cheese
- 1 cup whole milk
- ¾ cup heavy cream
- 1½ tsp cornstarch
- 1¼ cups shredded whole-milk mozzarella
- ¼ tsp white pepper (optional)
Instructions
- Cook spaghetti in well-salted boiling water until just al dente. Drain and set aside.
- Heat olive oil in a wide skillet over medium-high heat. Add ground beef, season with salt, pepper, smoked paprika, garlic powder, and oregano, and cook until deeply browned.
- Add butter and garlic, stirring until fragrant. Stir in Parmesan until melted.
- Whisk cornstarch into milk until smooth, then add to skillet with heavy cream, stirring as the sauce thickens.
- Lower heat and add mozzarella gradually, stirring until melted and glossy. Season with white pepper if using.
- Add cooked spaghetti and toss gently until fully coated.
- Remove from heat and let rest for 1 minute before serving.
Notes
- Use whole-milk mozzarella for best melt.
- Letting the pasta rest helps the sauce cling beautifully.
