Description

Filipino Beef Caldereta is a rich and hearty stew made with tender beef, vegetables, and a flavorful tomato-based sauce. Optional liver spread adds extra depth and richness.


Ingredients

    • For the Beef
    • 1 lb beef stew meat, cubed
    • 2 tbsp vegetable oil
    • 1 large onion, chopped
    • 3 cloves garlic, minced
    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 2 medium potatoes, cubed
    • 1 cup tomato sauce
    • 1/2 cup beef broth
    • 1/4 cup liver spread or pâté (optional, for richness)
    • 1 tsp paprika
    • 1 tsp dried oregano
    • 2 bay leaves
    • Salt & pepper, to taste

Instructions

  1. Sear Beef: Heat vegetable oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Add Vegetables & Sauce: Add red and green bell peppers, potatoes, tomato sauce, beef broth, paprika, oregano, bay leaves, and optional liver spread. Stir to combine.
  4. Simmer: Return beef to the pot. Cover and simmer for 1–1.5 hours, stirring occasionally, until beef is tender and sauce is rich.
  5. Season & Serve: Adjust salt and pepper to taste. Garnish with grated cheddar cheese and fresh parsley. Serve with rice or bread.
