Description
Filipino Beef Caldereta is a rich and hearty stew made with tender beef, vegetables, and a flavorful tomato-based sauce. Optional liver spread adds extra depth and richness.

- For the Beef
- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 medium potatoes, cubed
- 1 cup tomato sauce
- 1/2 cup beef broth
- 1/4 cup liver spread or pâté (optional, for richness)
- 1 tsp paprika
- 1 tsp dried oregano
- 2 bay leaves
- Salt & pepper, to taste
- Optional Garnish
- Grated cheddar cheese
- Fresh parsley
Instructions
- Sear Beef: Heat vegetable oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then remove and set aside.
- Sauté Aromatics: In the same pot, sauté onion and garlic until fragrant and translucent.
- Add Vegetables & Sauce: Add red and green bell peppers, potatoes, tomato sauce, beef broth, paprika, oregano, bay leaves, and optional liver spread. Stir to combine.
- Simmer: Return beef to the pot. Cover and simmer for 1–1.5 hours, stirring occasionally, until beef is tender and sauce is rich.
- Season & Serve: Adjust salt and pepper to taste. Garnish with grated cheddar cheese and fresh parsley. Serve with rice or bread.
Notes
- Liver spread is optional but adds authentic richness to the dish.
- Use well-marbled beef for tender results.
