Description
A refreshing fennel, apple and cabbage slaw tossed with a vibrant green mayonnaise dressing. Light, crunchy, and perfect as a fresh side for any meal.
Ingredients
- For the Slaw:
- 1 cup fennel, sliced
- 2 medium green apples, diced
- 2 cups cabbage, shredded
- For the Dressing:
- 1/2 cup vegan mayonnaise
- 2 tbsp lemon juice
- 1/4 cup mint, chopped
- 1/4 cup parsley, chopped
- For the Crunch:
- 1/2 cup pecans, chopped
Instructions
- In a large bowl, combine sliced fennel and diced apples. Drizzle with lemon juice and toss well.
- In a small food processor, blend mint and parsley, then add mayonnaise, salt, and pepper. Blend until smooth.
- Add shredded cabbage and half of the pecans to the bowl. Pour dressing over and toss to coat evenly.
- Garnish with remaining pecans and fresh mint leaves.
- Serve immediately or let sit for 10 minutes for best flavor.
Notes
- Let the slaw rest for 10 minutes before serving to enhance flavor.
- Use regular mayonnaise if not vegan.
- Add sunflower seeds or almonds for extra crunch.
