Description

Easy Mint Chocolate Chip Snowball Cookies: Cool, minty, melt-in-your-mouth cookies that taste like mint chocolate chip ice cream wrapped in a tender holiday cookie.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp mint extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 cup mini chocolate chips
  • 34 drops green food coloring (optional)
  • Additional powdered sugar for rolling


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat the softened butter and powdered sugar until creamy and smooth.
  3. Mix in the vanilla extract, mint extract, and green food coloring (if using).
  4. Add the flour and salt, mixing until a soft dough forms.
  5. Fold in the mini chocolate chips.
  6. Scoop 1-tablespoon portions of dough and roll into balls.
  7. Place on the baking sheet and bake for 10–12 minutes, until set but not browned.
  8. Let cookies cool for 5 minutes, then roll in powdered sugar.
  9. Once fully cooled, roll again for an extra snowy finish.

Notes

  • Optional green food coloring adds a festive look.
  • For a stronger mint flavor, increase mint extract to 3/4 teaspoon.
