Description

Easy Mango Chicken Curry is a simple Indian-inspired recipe with juicy chicken, ripe mango, coconut milk, and aromatic curry — ready in just 30 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 20 g (1 tablespoon) unsalted butter
  • 450 g (1 lb) chicken breast, diced
  • 1 medium onion, diced
  • 1 red pepper, sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons mild or medium curry powder
  • 200 ml (1 cup) chicken stock
  • 2 kaffir lime leaves
  • 400 ml (2 cups) full-fat coconut milk
  • 1 large mango, diced (about 250 g)
  • Fresh coriander leaves, for garnish


Instructions

  1. Heat olive oil in a large pan, add butter and melt. Add chicken breast and cook 4–5 minutes until lightly golden. Remove and set aside.
  2. Add onion and red pepper to the same pan and cook 2–3 minutes until slightly softened.
  3. Stir in garlic and ginger, cook 1 minute until fragrant.
  4. Add curry powder, chicken stock, and kaffir lime leaves; bring to a simmer.
  5. Stir in coconut milk, mango, and cooked chicken. Simmer 10 minutes until sauce thickens.
  6. Serve over basmati rice or cauliflower rice, garnished with fresh coriander.
