Easy Christmas Crack Cookies: Crispy, buttery, and irresistibly sweet—these festive cookies layer crackers with a toffee-like topping and soft sugar cookie dough for the ultimate crunchy-chewy holiday treat.


Ingredients

  • 24 square crackers (saltines or graham crackers)
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 roll (16 oz) refrigerated sugar cookie dough
  • 1/2 cup holiday sprinkles
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Arrange crackers in a single layer on the prepared baking sheet.
  3. In a saucepan, melt butter and brown sugar over medium heat. Stir and bring to a boil for 2 minutes until thickened.
  4. Remove from heat and stir in vanilla. Pour the mixture evenly over the crackers.
  5. Crumble or flatten small pieces of cookie dough over the toffee-covered crackers.
  6. If using, sprinkle chocolate chips on top.
  7. Bake for 10–12 minutes, until cookie dough is set and the edges are golden.
  8. Immediately top with sprinkles.
  9. Cool completely, then chill for 2 hours before breaking into pieces.

Notes

  • Chilling for at least 2 hours helps the pieces set and makes them easier to break.
  • You can omit the chocolate chips if you prefer.
  • Graham crackers or saltines both work—thicker crackers may need slightly more bake time.
  • Store in an airtight container for 3–5 days, or freeze for longer.
