Ingredients
- 1 (16 oz) package uncooked penne pasta
- 3 cups marinara sauce (about 1 (24 oz) jar)
- 3 cups water
- 1 teaspoon salt
- Ground black pepper, to taste
- 1½ lbs raw chicken breast, diced into bite-sized pieces
- 1–2 cups shredded mozzarella cheese (or Italian blend)
- ½ cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- Fresh chopped herbs (basil or parsley), optional garnish
Instructions
- Preheat oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish.
- In the baking dish, combine uncooked pasta, marinara sauce, water, salt, pepper, and diced chicken. Stir well.
- Cover tightly with foil and bake for 30 minutes.
- Remove foil and stir the casserole. Pasta may still be firm and slightly liquid—this is normal.
- Top evenly with mozzarella cheese, panko breadcrumbs, and Parmesan cheese.
- Return to oven uncovered and bake for 10–15 minutes until cheese is melted, golden, and bubbly and chicken is fully cooked.
- Garnish with fresh herbs if desired and serve hot.
Notes
- Cooking time may vary depending on pan type and pasta brand.
- Avoid overbaking to prevent mushy pasta.
- Add Italian seasoning, garlic powder, onion powder, or red pepper flakes for extra flavor.
- Glass or ceramic dishes may require additional baking time.
