Description

Ingredients

  • 1 pound fresh or store-bought gnocchi
  • 2 cups diced ripe tomatoes (or 1 14-oz can of high-quality canned tomatoes)
  • 2 balls burrata cheese
  • 3 garlic cloves, minced
  • ¼ cup fresh basil leaves, torn
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • Optional: ¼ teaspoon red pepper flakes for heat


Instructions

  1. Heat 2 tablespoons olive oil in a skillet over medium heat. Sauté garlic for 30 seconds until fragrant.
  2. Add diced tomatoes (or canned tomatoes) and simmer 10–15 minutes until slightly thickened. Season with salt, pepper, and red pepper flakes.
  3. Bring a large pot of salted water to boil. Cook gnocchi according to package instructions (usually 2–3 minutes). Drain, reserving ¼ cup pasta water.
  4. Add cooked gnocchi to the skillet with tomato sauce. Gently toss to coat, adding reserved pasta water if needed. Cook 1–2 minutes to combine flavors.
  5. Remove skillet from heat. Tear burrata into pieces and place on top of gnocchi.
  6. Drizzle with remaining olive oil, sprinkle torn basil, and season with additional salt and pepper if desired. Serve immediately.
