This Tomato Gnocchi with Burrata is a delightful Italian-inspired dish combining pillowy gnocchi with flavorful tomato sauce, topped with creamy burrata cheese. Perfect for quick weeknight dinners or impressive meals for guests.
Ingredients
- 1 pound fresh or store-bought gnocchi
- 2 cups diced ripe tomatoes (or 1 14-oz can of high-quality canned tomatoes)
- 2 balls burrata cheese
- 3 garlic cloves, minced
- ¼ cup fresh basil leaves, torn
- 3 tablespoons extra virgin olive oil
- Salt and pepper, to taste
- Optional: ¼ teaspoon red pepper flakes for heat
Instructions
- Heat 2 tablespoons olive oil in a skillet over medium heat. Sauté garlic for 30 seconds until fragrant.
- Add diced tomatoes (or canned tomatoes) and simmer 10–15 minutes until slightly thickened. Season with salt, pepper, and red pepper flakes.
- Bring a large pot of salted water to boil. Cook gnocchi according to package instructions (usually 2–3 minutes). Drain, reserving ¼ cup pasta water.
- Add cooked gnocchi to the skillet with tomato sauce. Gently toss to coat, adding reserved pasta water if needed. Cook 1–2 minutes to combine flavors.
- Remove skillet from heat. Tear burrata into pieces and place on top of gnocchi.
- Drizzle with remaining olive oil, sprinkle torn basil, and season with additional salt and pepper if desired. Serve immediately.
