Description

Ingredients

  • Sweet Potatoes
  • 4 medium sweet potatoes
  • Filling
  • 2 cups fresh spinach
  • 1 cup mushrooms (button or cremini), chopped
  • 2 cloves garlic, minced
  • 8 oz cream cheese
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Poke holes in the sweet potatoes, place on the baking sheet, and bake for 45–60 minutes until tender.
  3. Heat olive oil in a skillet over medium heat. Add garlic and mushrooms; cook 5–7 minutes until golden.
  4. Add spinach and sauté 2–3 minutes until wilted. Remove from heat.
  5. In a bowl, mix the sautéed vegetables with cream cheese and half of the shredded cheese.
  6. Let sweet potatoes cool slightly. Slice lengthwise, scoop out some flesh, and mix it into the filling.
  7. Stuff the sweet potatoes generously with the mixture and top with remaining cheese.
  8. Return to oven and bake 10–15 minutes until cheese is melted and bubbly.

Notes

  • Poke holes in sweet potatoes before roasting to prevent bursting.
