Ingredients
- Sweet Potatoes
- 4 medium sweet potatoes
- Filling
- 2 cups fresh spinach
- 1 cup mushrooms (button or cremini), chopped
- 2 cloves garlic, minced
- 8 oz cream cheese
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Poke holes in the sweet potatoes, place on the baking sheet, and bake for 45–60 minutes until tender.
- Heat olive oil in a skillet over medium heat. Add garlic and mushrooms; cook 5–7 minutes until golden.
- Add spinach and sauté 2–3 minutes until wilted. Remove from heat.
- In a bowl, mix the sautéed vegetables with cream cheese and half of the shredded cheese.
- Let sweet potatoes cool slightly. Slice lengthwise, scoop out some flesh, and mix it into the filling.
- Stuff the sweet potatoes generously with the mixture and top with remaining cheese.
- Return to oven and bake 10–15 minutes until cheese is melted and bubbly.
Notes
- Poke holes in sweet potatoes before roasting to prevent bursting.
- Taste the filling before stuffing and adjust seasoning.
- Allow potatoes to cool slightly before slicing.
