- For the Stew
- 1 lb chicken sausage, sliced into rounds
- 3 medium potatoes, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas or carrots (optional)
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt & black pepper, to taste
- 2 tbsp olive oil or vegetable oil
- For Garnish
- Chopped parsley
- Crusty bread, for serving
Instructions
- Cook Sausage: In a large pot, heat olive oil over medium heat. Add chicken sausage slices and cook until lightly browned. Remove and set aside.
- Sauté Veggies: In the same pot, add onions and garlic. Sauté until fragrant and translucent.
- Add Potatoes & Spices: Add diced potatoes, smoked paprika, thyme, salt, and pepper. Stir to coat.
- Simmer: Pour in chicken broth and bring to a boil. Reduce heat and simmer 15–20 minutes until potatoes are tender.
- Add Cream & Sausage: Stir in heavy cream and return sausage to the pot. Add frozen peas or carrots if using. Simmer 5 minutes until heated through.
- Serve: Ladle into bowls, garnish with parsley, and serve with crusty bread.
Notes
- Use chicken sausage with your favorite seasoning for added flavor.
- For a thicker stew, mash some potatoes slightly or add a teaspoon of cornstarch mixed with water.
