Description

A zesty, creamy, and delicious butter bean recipe that can be enjoyed as a stew or served over rice or quinoa. Quick, flavorful, and satisfying for a plant-based meal.

Ingredients

  • 2 tablespoons oil (avocado or olive oil)
  • 1 red onion, finely chopped
  • 4 garlic cloves, minced
  • 1 can (13.4 oz) pre-cooked butter beans, drained and rinsed
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons lemon juice, fresh or bottled
  • 1 teaspoon ground turmeric
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • Optional garnishes: red chili flakes, hemp seeds

Instructions

  1. Heat oil in a small saucepan over medium heat. Add onion and garlic, sauté 5 minutes until soft and golden.
  2. Add butter beans, coconut milk, lemon juice, turmeric, black pepper, paprika, oregano, and salt. Stir well.
  3. Simmer while stirring frequently until thickened and creamy, about 5 minutes.
  4. Serve warm over rice or quinoa, garnished as desired.

Notes

  • Store in an airtight container in the fridge up to 1 week.
  • If too soupy, mash a few beans while simmering to thicken.
  • Pairs well with grains or as a hearty stew.
