Description

Cozy Thai Coconut Red Lentil Soup is a comforting, creamy, and lightly spiced soup perfect for chilly evenings. It combines red lentils, coconut milk, aromatic Thai spices, and fresh herbs for warmth and flavor.


Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon red curry paste
  • 1 cup red lentils, rinsed
  • 1 can (400 ml) coconut milk
  • 4 cups vegetable stock
  • 1 medium carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 tablespoons lime juice
  • Fresh cilantro, chopped, for garnish
  • Salt and pepper, to taste


Instructions

  1. Heat coconut oil in a large pot over medium heat. Add onion and cook 3–4 minutes until softened.
  2. Add garlic, ginger, and red curry paste. Cook 1 minute until fragrant.
  3. Add red lentils, coconut milk, vegetable stock, carrot, and bell pepper. Bring to a boil, then simmer 20–25 minutes until lentils are tender.
  4. Add zucchini and cook an additional 5 minutes until just tender.
  5. Stir in lime juice, season with salt and pepper.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For extra richness, blend half of the soup for a creamier texture.
  • Can be stored in the fridge for up to 4 days and reheated gently.
